Dawn Foods and UCB Student Ambassador Laura Turn Revival Recipe Ideas into Reality

University College Birmingham (UCB) student Laura Gibbons finalised three classic recipe re-inventions with Dawn Foods Head Application Chef Robin Loud when he recently visited UCB.

During the visit, Robin and Laura put into practice the recipe ideas devised at the end of 2016 with a view to reviving traditional bakery items to give them an edge for the future.

As part of its commitment to nurturing a new generation of young bakers, Dawn Foods has partnered with UCB, appointing Laura - a final year Bakery and Patisserie undergraduate at the university - as the company’s first Student Ambassador.

Laura has been working with Dawn Foods, focusing on ‘Creating New Traditions’, a brand new European-wide Dawn campaign which will see established sweet bakery products being given a new twist for the next generation. As part of the campaign, these contemporary new takes on traditional sweet products will be launched as bakery recipes in 2017.

Laura shares her experience of her third session working with Dawn Foods, using Dawn’s extensive range of ingredients to produce three new bakery items as part of the campaign.


“Robin returned to UCB for our third meeting and the first one of 2017! During this visit, we created three of the recipes ideas that we had come up with in previous visits. We started by making the bases required for certain parts of the recipes and then set about producing other aspects that needed to be set such as the mousse and fonds.

“Following this we produced the crème cake batter and the different flavours were added in the forms of compounds and fruit fillings. This gave us the chance to make sure that the flavours balanced well and it showed me just how multifaceted the fruit fillings can be, as they can also be applied to batters as well as frostings and fillings.

“Having the chance to formulate the recipes and execute them completely, allowed me to get hands on with a whole range of other Dawn Foods products. I got to see how versatile they are when used altogether to create a finished product with multiple aspects.

“I really enjoyed myself and was delighted to see the finished products and recipe ideas finalised. I look forward to my next visit to Dawn Foods in Evesham where I will see the images of the final products and trial out the next three recipes.”
