Dawn Foods UK
Dawn Foods was recently host to members of the British Confectioners Association (BCA) which represents the best craft bakeries and patisseries in UK at one of its regular fact finding and networking meetings.
BCA members meet five times a year to discuss current issues within the bakery industry, spend time in technical sessions and to share best practice with colleagues. It is a chance for top bakery businesses and craftspeople to meet and exchange ideas. As part of the membership, which is by invitation only, BCA members must hold a meeting once every seven years. This event was organised by John March, Sales Manager Dawn Foods, who is a member of the BCA.
During the trip to Dawn Foods’ European site, BCA members discussed latest trends with a focus on spring/summer 2018. ‘Natural’ was high on the agenda with the visitors receiving a demonstration from Laszlo Sztancsik, Application Chef at dawn Foods, showcasing the current market trends integrated into finished products. Special focus was given to using herbs and spices in sweet bakery in line with trends for unusual flavour combinations. Recipes for sampling at the day included Tarragon Mango & Pumpkin Cheesecake, Rosemary Upside Down Apple Pie and White Chocolate Cake with Sage & Raspberry, among others. There was also interest in how decorations such as chocolate fruits can give more natural looks to bakes too.
As well as an overview of Dawn’s business from the company’s UK and Ireland Cluster Director Chris Jenkins, the visitors spent time with Dawn partners Dobla and Smilde who provide a number of ready to use options including Dobla chocolate decorations and Pruvé pastry cases for the busy baker.
