ORIGINAL PRODUCT

The Swedish style apple pie called “äppelkaka” is a common crumble cake, which contains apples as the main ingredient, which differs from a pie since it is a sponge cake baked with fresh apple pieces in it.

 

THE TWIST

The Swedish apple pie with an exotic touch.

COMPOSITION:

For 12 mini pies 8 cm

  • 220 g Dawn Shortcrust Mix
  • 360 g Coconut base
  • 200 g Apple
  • 60 g Crumble

BASIC RECIPES:

Shortcrust

  • 1000 g Dawn Shortcrust Mix
  • 400 g Butter
  • 100 g Eggs

Liquorice Cake Base

  • 1000 g Dawn Creme Cake Base Plain CL
  • 250 g Butter

Coconut Base

  • 350 g Butter
  • 300 g Eggs
  • 300 g Dawn Creme Cake Base Plain CL
  • 120 g Almond paste
  • 40 g Almond powder
  • 85 g Coconut powder

Glaze

  • 500 g Dawn Belnap Neutral 100
  • 400 g Water

PROCESSING:

Mix Dawn Shortcrust Mix, butter and eggs rollout 2 mm
Cut and deposit in silicon
Mix almond paste, butter and eggs until a creamy
Fold Dawn Creme Cake Base Plain CL, almond powder and coconut powder carefully
Pipe onto coconut base and deposit a sliced fresh apple on top and bake

 

TEMPERATURE: 190˚C
TIME: 15-18 minutes

 

Mix Dawn Creme Cake Base Plain CL and butter until a nice crumbly texture and bake golden brown
Glaze after baking
