Red Velvet Cake

ORIGINAL PRODUCT

Skyr is an Icelandic cultured dairy product. It has the consistency of strained yogurt/greek yogurt but a much milder flavor. It has been a part of Icelandic cuisine for over a thousand years. It is traditionally served with cold milk and a topping of sugar.

 

THE TWIST

Skyr used in baked cheese cake. Combined with several trendy taste combinations.

COMPOSITION:

for 12 mini cakes Ø 7 cm , high 7 cm

  • 600 g Crumble
  • 1200 g Skyr base

BASIC RECIPES:

Crumble

  • 1000 g Dawn Creme Cake Base Plain CL
  • 250 g Butter

Chocolate Crumble

  • 1000 g Dawn Creme Cake Base Chocolate CL
  • 250 g Butter

Skyr Cheese

  • 1000 g Skyr
  • 350 g Dawn Cheese Cake Easy
  • 175 g Eggs
  • 75 g Sugar
  • 70 g Vegetable oil

Optional

  • 60 g Dawn Compound Caramel /
  • 60 g Dawn Compound Mango

Glaze

  • 500 g Dawn Belnap Neutral 100
  • 400 g Water

Fruit layer

  • 200 g Dawn Delifruit Mango

PROCESSING:

Mix Dawn Creme Cake Base Plain CL and butter until a nice crumble structure and press the mixture into a loose-bottomed tin about 1 cm layer
Pipe Mango fruitfilling onto crumble base
Mix all ingredients with a flatbeater for a skyr base, pipe onto the crumble base and bake

 

TEMPERATURE: 175˚C
TIME: 30-35 minutes
