Recipe: Protein-Packed Muffins

Ingredients

5 pounds Dawn Bakers Truth™ Creme Cake Mix
11 ounces bread flour
18 eggs
2 ounces vanilla
1 ounce cinnamon
1 1/2 pounds oil
12 ounces Greek yogurt
9 ounces apple butter
6 1/4 ounces honey
1 ounce chia seeds
5 ounces peanut butter powder
2.5 ounces quinoa
12 ounces chopped dried apples
5 ounces sunflower seeds, plus more for topping

Directions

In a stand mixer, mix Bakers Truth Creme Cake Mix, bread flour, eggs, vanilla, cinnamon and 18 ounces of water on low for 1 minute. Bring speed to medium and mix for 3 minutes.

Add oil, yogurt, apple butter and honey to the mixing bowl and mix on low for 1 minute. Scrape down the sides of the bowl and mix for 3 more minutes on low.

Add remaining ingredients and mix on low for 2 minutes.

Pour roughly 3 ounces of muffin mixture into each cup of lined muffin tins. Sprinkle muffins with extra sunflower seeds and bake at 375 F for 20 to 30 minutes, or until done.

Yields 72 muffins
