WORKING METHOD

Make up the cake mix according to manufacturer’s instructions, making sure the whip and bowl are completely clean and free of grease and oils.  Using a miniature angel food cake pan with 8oz cavities, treat with pan spray.  Deposit 1.25oz into each cavity and bake at 365F 20-25 minutes or until rich, golden brown.  Let cool 5 minutes, then unmold and let cool completely.  While cakes are cooling, whip whipped topping.  Serve cakes with fresh berries and whipped topping.

Chef Tips

Want to be extra sure your sponge or angel food cake will perfectly whip every time?  Before using your clean, dry bowl and whip, place lemon juice on a cotton swab and brush over the inside of the bowl and whip.  The (very) small addition of acid will clear away any remaining grease and aid in whipping the cake.
