Working Method

For the Churros

  •  Dawn Classic Churro Mix (524274) 
  •  Water

Follow manufacturer’s instructions to make 5 pounds churro mix.  Using a large open star tip, pipe 4-inch circles onto a parchment lined sheet tray.  Freeze overnight.  Fry according to manufacturer’s instructions and roll in desired flavored sugar.


Dark Chocolate Chile

Cinnamon Sugar:

  •  Granulated Sugar (85639)
  •  DDA Ceylon Cinnamon Coarse (1096587)

Mix 12oz granulated sugar and 0.5oz cinnamon together

Chocolate Chile Filling:

  •   Dawn Exceptional® Soft Chocolate Fudge Icing (19331)
  •  Tajin seasoning

Mix 2 pounds Dawn fudge icing and 0.5oz tajin together

To assemble:

Fry the churro circles until brown into the cracks.  Roll in prepared cinnamon and sugar while still warm.  Place prepared filling in a piping bag with a large straight tip, pipe circles of the filling onto one churro round, top with another churro round.  Garnish with a mini chile pepper if desired.

 

Strawberry Crème

Strawberry Sugar:

  •  Granulated Sugar (85639)
  •  freeze dried strawberry powder

Mix 12oz granulated sugar and 1oz freeze dried strawberry powder together

Strawberry Crème Filling:

  •  Dawn White Holland Creme Filling (2405422) 
  •  Dawn Strawberry Icing Fruits (418691) 

Mix 2 pounds holland creme and 2oz strawberry icing fruits together

To assemble:

Fry the churro circles until brown into the cracks.  Roll in prepared strawberry sugar while still warm.  Place prepared filling in a piping bag with a large straight tip, pipe circles of the filling onto one churro round, fit sliced fresh strawberries into the filling, top with another churro round. 

 

Blueberry Thyme

Blueberry Sugar:

  •  Granulated Sugar (85639)
  •  freeze dried blueberry powder

Mix 12oz granulated sugar and 1oz freeze dried blueberry powder together

Blueberry Thyme Filling:

  •  Dawn White Holland Creme Filling (2405422)
  •  Dawn Blueberry Fruit Bits (15743) 
  •  5 drops thyme oil

Mix 2 pounds holland creme, 2 oz blueberry icing fruit bits, and 5 drops thyme oil together

To assemble:

Fry the churro circles until brown into the cracks.  Roll in prepared blueberry sugar while still warm.  Place prepared filling in a piping bag with a large straight tip, pipe circles of the filling onto one churro round, fit fresh blueberries into the filling, top with another churro round.  Garnish with a sprig of fresh thyme if desired.
