What you'll need


Prepare dough balls

Form 2.5 oz dough balls using Dawn® Mi Panadería® Concha Mix, per instructions on the mix bag Proof the dough balls, per instructions on the mix bag

Prepare “pasta” topping

Combine flour, sugar and shortening Divide the pasta into as many pieces as the number of colored toppings you’d like — typically Concha toppings are either yellow, pink, brown (use cocoa), and white (no color)

Apply pasta topping to the dough balls

Coat top of already proofed dough balls with a small amount of shortening Apply ¾ oz of topping on top of each dough ball Flatten with hands and spread the topping to cover the dough ball entirely Score shell pattern into the Concha topping, ideally with a “Concha" cutter
