Working Method

Mix together 5 lbs Dawn Exceptional Dark Devil’s Food Cake Donut Mix according to bag directions with 1 lb, 9 oz extra stout beer and 1½ oz instant yeast for 1 minute on 1st speed on a 3-speed machine. Then mix for 1 minute on 2nd speed. Place mix on a floured bench and roll out to ½” thick and cut with a 3” ring donut cutter. This cake/yeast donut hybrid performs better if cut on a bench rather than dropping from a hopper. Place on a fry screen leaving 1” between donuts. Fry at 375°F for 1 minute on each side until done in center. The donuts should come out looking fried evenly with a pleasant stout beer flavor. 

Prepare thick chocolate stout icing by mixing together 1 lb, 8 oz Classic Chocolate Fudge Icing with 6 oz of extra stout beer. Heat up chocolate stout icing until warmed. Dip chocolate stout donut into icing, let excess icing drip into bowl and immediately garnish with crushed pretzel topping or other desired crunchy toppings.
