For the Brownie Batter:
1 pound prepared brownie mix made according to bag directions. Using a freezer safe disc mold (each cavity should be 1oz), pour batter into mold and freeze overnight
For the Batter:
Place 2 pounds pancake mix and 1 pound club soda or sparkling water in the bowl of a stand mixer fitted with the paddle attachment. Mix on first speed until no lumps remain, scraping down the bowl as needed.
Using a heavily floured bench, roll the dough to ¼ inch thick. Using a circle cutter that is slightly larger than the disc mold used, cut out circles- two circles for each disc.
Gently brush half the dough circles with water, then place frozen discs on the dough circles that have been crushed with water. Place another dough circle on top and pinch the edges to seal.
Place prepared discs in the freezer
When ready to serve, deep fry discs at 365F until golden brown and serve hot.
