WORKING METHOD

Line conventional size cupcake pan with paper liners. Mix cake according to manufacturer’s instructions then use a #16 blue scoop to deposit 1.5oz batter into each cavity. Bake at 350F until cupcakes spring back lightly when touched. Let cool completely.  Place red buttercreme into a piping bag fitted with a large open star tip, place the yellow buttercreme into a piping bag fitted with a small French star tip, place the orange buttercreme into a piping bag fitted with a medium French star tip, and place the light blue buttercreme into a piping bag fitted with a rose tip.  Decorate the cupcakes using swirls, rosettes, stars, and stripes.  Sprinkle with pearl sprinkles lightly before buttercreme has set.
