Sourdough Lemon Meringue Donuts

Working Method

Prepare sourdough donut mix according to manufacturer’s instructions, shaping into Bismarks.  Fry and let cool completely.  Fill with lemon filling and glaze.  Let set up completely.  Prepare the meringue according to manufacturer's instructions.  Sprinkle tops of donuts with granulated sugar (so meringue has something to “stick to”) and pipe meringue in a swirl, toast meringue and then refrigerate donuts.  Serve cold.

Meringue must be either baked at 400°F for 3-5 minutes or refrigerated.
