Melt coating chocolate. Dip strawberries in prepared melted chocolate, place on a parchment lined sheet tray and reserve in the cooler.
In a stand mixer fitted with the whip attachment, mix cake mix according to manufacturer’s instructions. For every pound of prepared batter, mix in 1oz strawberry fruit bits and both pink & red food colorings to desired hue. Spray and paper an 8 inch round cake pan and deposit 12oz batter in 2 pans. Bake until golden brown and cake springs back lightly when touched. Let cool completely.
Mix 3 pounds whipped topping, 4.5oz strawberry emulsion, and pink food coloring to desired hue. Reserve in cooler.
Mix together equal parts by weight sweetened condensed milk, evaporated milk, and half & half, stirring in 1oz fruit bits for every pound of prepared milks. Weigh cake, pour the same weight prepared milk over cake and let soak in completely. Place one cake round on a cake board, pipe around the edges with prepared whipped topping. Place the other round on top,crumb coat and then ice with prepared whipped topping. Decorate with reserved chocolate dipped strawberries and chocolate curls.
