Prepare Dawn® Baker’s Request™ Carrot Cake Mix per bag instructions using a stand mixer with paddle attachment. During the mix make sure to scrape the bowl well to ensure cohesive mix. Spray pan. Portion batter evenly.
Place in preheated 350°F oven and bake 8-10 minutes or until cake is set. Remove from oven and let cool 15 minutes. Remove from pan and place top down on parchment-lined sheet pan. Set aside to cool completely.
Place a scant amount of olive oil in sauté pan and place over medium heat. Gently place pineapple rings in pan and sauté. Caramelize each side of the pineapple ~5-7 minutes on each side. Once caramelized, add butter and brown sugar. Cook until sugar has dissolved and mixture begins to bubble. Remove from heat and set aside to cool.
Fill a disposable piping bag fitted with a star tip with Dawn Exceptional® Cream Cheese Icing and pipe atop one Carrot Cake bun, top side up. Pipe an “O” shape. Place the brown sugar pineapple ring on top of the icing and press – the icing will push through the center. Place thinly sliced kiwi fruit on top of pineapple. Slice blueberries in half. Place on sides of icing and atop the kiwi. Sprinkle white chocolate blossoms over fruit. Pipe a small dollop of cream cheese icing in the center of the fruit. Finish by placing, top down, a Carrot Cake bun.
