Gory Red Velvet Cupcake

Red Velvet Cake

COMPOSITION:

25 units with +/- 70g of dought

1. Sponge Cake

 

2. Cream

 

3. Topping

 

4. Decorating

  • Dawn Shape-It

Yield: 30 cupcakes at 60g

WORKING METHOD:

1. Sponge Cake

  • Add all ingredients to a mixing bowl fitted with a beater. Mix for 1 minute on slow speed an then 4 minutes on medium speed.
  • Deposit @ 60g into red cupcake cases.

BAKE TEMPERATURE: 180°C

BAKING TIME: 20-25 minutes



2. Cream Frosting

  • Mix water with the DAWN® Neutral Fond and DAWN® Vani-Star, then fold in the whipped cream. Then pipe the frosting in a swirl with a round nozzle.

 

3. Topping

  • Warm up the DAWN® Decorgel Plus Neutral with the water at 45ºC and mix in the DAWN® Strawberry Compound and colour.

 

4. Decorating

  • Decorate with the DAWN® Shape-It.
  • Add the DAWN® Shape-It powder to a saucepan and heat on a medium heat until fully dissolved. Pour the hot liquid onto a silicone mat and allow to set hard. Break into pieces that represent glass shards.
  • Brush the with the prepared red topping glaze and insert the pieces into the cupcake. Then drizzle more of the topping glaze onto the cupcake frosting to make it even more spooky.
