Sugar Sprinkle Swiss Roll

COMPOSITION:

ASSEMBLY:

  • Add all the ingredients to a mixing bowl fitted with a whisk and mix on slow speed for 1 minute and then fast speed for 4 minutes.
  • Deposit at 850g onto clean lined / greased 18” x 30” baking trays and spread evenly.Bake in a deck oven at 230°C for approximately 5-6 minutes.
  • Remove from oven and tip onto clean silicone paper dusted with sugar and allow to cool.
  • Remove the backing paper and cut each sheet in half lengthways.
  • Spread each half with 1000-1500g of Dawn ® Vanilla Frosting (dependant on how thick you want the filling) and sprinkle with multi-colour sugar strands.
  • Roll up into a Swiss Roll, cut off the ends and cut to desired length (3-4 per half sheet).
  • Coat the sides of each Swiss Roll in a thin layer of Dawn ® Vanilla Frosting and then roll them in more multi-colour sugar strands.
  • Place on cake boards or plates and serve.

Yield: Approximately 18 – 24 finished Swiss Rolls
