Sunrise Ombre Layer Cake

COMPOSITION:

For 1 16cm Cake

900g Layer Cake White batter

         DAWN Vanilla/Cream Cheese Frosting

         Macarons  

 

BASIC RECIPE: 

1. Layer Cake batter

1000g DAWN Layer Cake Mix - White 

660g   Water

120g   Vegetable Oil

           Purple Food Colouring

1780g  Total

 

2. Macaron  

1000g DAWN French Macaron Mix  

200g   Water    

           Purple Food Colouring

1200g Total

Yield: approx. 8-10 servings

 

 

 

WORKING METHOD:

1. Layer Cake Batter
Mix all ingredients with a flat beater for 1 minute on low speed. Mix for a further 3-5 minutes on a medium speed. Then finally, mix for 1 minute on a low speed.   

Split in 6 bowls add purple colour until desired colour strength achieved.

Fill the Layer Cake batter into ring forms.

Bake temperature - Deck Oven: 175c-180c /Rack Oven: 150c - 160c.

Bake time: approx. 30-35 minutes.

 

2. Macaron

Mix all ingredients with a flat beater for 1 minute on a low speed. Mix for a further 3 minutes on a high speed. Pipe Macaron batter onto a silicone or paper lined baking tray.

Bake with double tray.

Bake temperature - Deck Oven: 150c / Fan Oven: 130c.

Bake time: 20-23 minutes.

 

ASSEMBLY:  

Spread each layer with frosting, sandwich all together and then cover the cake with the remaining frosting very thinly to get the naked cake character.

Decorate with Macarons and Viola flowers.
