Chocolate mousse

Directions

To create the Chocolate mousse- mix 60g chocolate fond, 60g water, 300g double cream/dairy free whipped cream together.

Assembly

  • Freeze orange filling in a small hemisphere silicon mould. (2.5 cm)
  • Cut the brownie to fit the bigger hemisphere mould size 4.5cm approx.
  • Prepare mousse and fill the big hemisphere halfway, place the frozen insert and cut brownie. Pipe more mousse and even the surface. Freeze it overnight.
  • Warm the glaze slightly to make it easy to pour.
  • Place the frozen mousse on a wire rack and glaze.
  • Carefully place the glazed dome on a 6.5 cm board
  • Fill a piping bag half side with orange and half with yellow frosting (Star nozzle) and pipe on the dome and place on dome. Arrange pretzel sticks to make it look like a bonfire.
