Vegan Lemon Cupcakes

Directions

- Add all ingredients to a mixing bowl fitted with a beater.

- Mix on slow speed for 1 minutes and then a further 2 minutes on medium speed.

- Deposit 135g in each of the prepared cupcake cases.

- Bake in deck oven at 185ºC for 40 minutes.

Meringue Frosting

Directions

Place the ingredients into a mixing bowl and mix together until fully combined and stiff peaks form.

Assembly

  • Place the prepared frosting into a piping bag fitted with a large star tube.
  • Pipe a tall rosette onto each cooled cupcake.
  • Decorate with candied/dried lemon pieces if desired.
