SPICED CRANBERRY & ORANGE DONUT BUNDT CAKE

Spiced Cranberry & Orange Donut Bundt Cake

Ingredients

CAKE
  • DAWN® Crème Cake Base Plain 1000g
  • Mixed Spice 11g
  • Liquid Egg 350g
  • Vegetable Oil 300g
  • Water 225g
  • DAWN® Orange Fruit Concentrate 40g
  • Dried Cranberries 100g
ORANGE FILLING
  • DAWN® Delifruit Daily Orange Fruit Filling 500g
  • DAWN® Sanatine Powder 25g
  • Boiling Water 50g
FINISH
  • Melted Butter
  • Icing Sugar

Directions

Add the Creme Cake Base Plain and mixed spice to a bowl fitted with a beater and blend on slow speed for 1 minute. Add the liquids and Orange Fruit Concentrate and mix for a further 1 minute on slow speed and then 3 minutes on medium speed. Add the dried cranberries and blend on slow speed.

For the orange filling dissolve the Sanatine Powder into the boiling water and then stir into the Delifruit Daily Orange. Deposit the spiced cake batter into a prepared Bundt tin to fill it a quarter full. Place the orange filling into a piping bag and pipe into the Bundt tin ensuring not to touch the sides. Top up the Bundt tin with more of the spiced cake batter until it is two thirds full.

Bake at 170°C for 50-60 minutes. Once cool, remove from the tin.

Before serving, brush with melted butter and dust with icing sugar or dusting sugar.
